Recipe: Cheater’s Ceviche

Until recently, I had no idea what ceviche was. Then I had some that changed my life!

That last bit was a bit dramatic, but ceviche has quickly become one of my favorite things to order at San Diego eateries. What is it? It’s kind of… a fish dip? That really doesn’t sound appetizing, does it. But picture: A strong tortilla chip heaping with refreshing lime-drenched fish, corn, tomato, and cilantro. Sounds better, doesn’t it?

So, after googling around for a few recipes I learned the secret: The fish (usually a firm, white variety) goes into the mixture raw, and while marinating, the lime and lemon juices “cook” it –the fish gets firm and turns opaque instead of translucent… sounds cooked to me, right?

Not quite brave enough to do it the “real” way, we cooked up a bunch of shrimp we had hanging around in our freezer and made up a batch of cheater’s ceviche.

Ingredients

  • Shrimp or other seafood (I don’t know how much… two cups?)
  • Corn (1 can)
  • Tomato (one tomato, seeds removed)
  • Onion (1/3)
  • Cilantro (as much as you like)
  • Lemon Juice (1/3 cup)
  • Lime Juice (1/3 cup)
  • A dash each of: salt, pepper, cayenne
  • Protip: Add avocado, or at least have some slices ready when you serve this–for an earthy balance to the sharp citrus.

Ceviche

I cooked my shrimp with a little bit of garlic and oil, let cool, and carefully cut them into thirds–this dish will be chunky but it’s good to have pieces all relatively the same size. Then I diced my onions and let them chill in a bowl of cool water to remove some of the sharpness (drain the water after a few minutes). I Finely minced the cilantro and seeded and diced the tomato. I squeezed two lemons and five (I think?) limes in order to get the appropriate amount of juice. You should do yourself a favor and buy bottles of lemon and lime juice.

Ceviche

Mix everything together in some kind of vessel (it doesn’t matter what, really), cover, and let chill in the refrigerator at least an hour (ours was overnight). I stirred ours up occasionally.

To be honest, since the lemons were easier to squeeze than the limes, I erred on the side of lemon juice and my first foray into this dish was very tart. Note to self! Using the appropriate amount of lime juice is very important! Additionally, I feel that the addition of avocado would have toned down the tartness and been an incredibly delicious addition.

As I said in the beginning, this is usually served in small portions with chips, but we had this over greens for dinner. Healthy! I love finding fresh and interesting recipes that will be made more often as weather continues to warm up.

Two Years With Mosey

So, now we have been dog owners for two years. Last year I let you glimpse Mosey’s World and this year much of it is the same although in a new place. I am working on a new dog bed for him, though, which I’ll be eager to share as the simplest DIY ever here on the blog in a week or so–stay tuned!

I never thought I would be able to understand a creature from a different species so well. I know Mosey’s idiosyncrasies, like when he really needs to go out versus when he’s faking– when he’s feeling antsy and wants to play, or when he hears another dog outside the apartment and his ears perk up because he wants to meet it.

I remember when we first got Mosey and he was six months old. We were making him sleep in the kennel instead of with us, and I would stay up all night due to his whimpering (he wanted to be in our bed!) I would get into staring matches with him, trying to assert dominance. The stress and adjustment of adding our new family member broke me down into tears on many occasions. What a lifestyle change it was! Doesn’t it sound silly now? It really was a huge step for me as I considered myself his primary caretaker since I am a lighter sleeper (to take him downstairs if he gets up at night) and during the day (Doug worked many more hours than I did). Now I still take him down at night, but Doug and I share duties during the day.

Happy Mosey Day!

Now that he’s older things are much better. We understand each other, more or less. I think I’ve gotten the hang of being a dog owner and I think he (usually) gives me the respect I deserve–when he can tell my tone of voice means no funny business.

He’s still a brat though, begging at the table and pulling on the leash. He’s not as well trained as he could be but he makes up for it in the morning when we sleep in together and he curls up in the crook of my legs, or when I’m on the couch writing on the laptop and he tucks his head into the crevice behind my back.

I love you, Mosey! I’m so happy to have you in our family!

I suppose since Monday has swung around again, I should offer an account to what I’ve been up to, since I clearly haven’t been blogging…

millennium trilogy covers

Last week I read the last two books in this Millenium trilogy… in like two days each, despite their heftiness. I was so drawn in that I couldn’t put them down! I stayed up until 2AM reading on a few occasions, then slept in extra late to make up for it. Now my body clock is all out of whack, but that’s neither here nor there. Normally I’m drawn to memoirs or historical fiction but with these thrillers I made an exception–okay, well I’m a sucker for conspiracy theories so I suppose these fit the bill in that regard. I highly recommend them, especially in comparison to the dearth of good action movies in theaters these days. I have to give a caveat that there are some graphic scenes and if you don’t like strong language, you may be put off.

As a feminist, the themes of men vs. women, stereotyping women, and women as victims all gave me a lot to think about.

I’ve been working, as usual, meeting some new people, and hanging out with friends. You know, the usual, but not necessarily blog-worthy. I did see Jurassic Park for the first time though, in 3D, and wow! That movie is intense!! I can’t imagine how my peers all saw it in elementary school! I jumped several times, and was very impressed by the special effects! I can appreciate a good CGI monster, but animatronic ones really blow me away more for some reason!

Hopefully the mac will be repaired by the end of the week (it’s expensive, so we couldn’t get it done right when it broke) so I can get back into the swing of things!
